Low-Fat Red Beans And Rice (High Fiber) Recipe

| Ingredients | | | 1 | each | red kidney beans, 6 oz can | | | 1 | cup | water | | | 1/2 | cup | pumpkin | | | 1/4 | cup | tomato sauce | | | 3 | tablespoon | chili sauce | | | 1/8 | teaspoon | oregano | | | 1/8 | teaspoon | garlic, minced | | | 2 | cup | rice, cooked, hot | | | | | | Directions:
| In large nonstick saucepan over high heat, combine all ingredients except rice. Bring to boil, boil for 1 minute and reduce heat to low. Simmer 30 minutes, adding water if needed. Stir occasionally. Serve over rice.
Makes 4 servings. Calories 157 Fat 1 g Fiber 6.2 g.
