Oatmeal Cake Recipe - Baked Goods Recipes

----------------------------KAY BURGER (XWSF96A---------------------------- 1 1/4 c Boiling water

1 c Quick oats; uncooked

1/2 c Margarine

1 c Brown sugar

1 c Sugar

1 ts Cinnamon

1/2 ts Nutmeg

1/2 ts Salt

1 ts Baking powder

1 1/3 c Flour

2 Eggs

----------------------------------TOPPING---------------------------------- 6 tb Margarine

1 c Pecans; chopped

1/2 ts Vanilla extract

1/2 c Brown sugar

1/4 c Evaporated milk

1 c Coconut

Pour boiling water over oats. Add margarine. Cover and let stnad 20 minutes. Add all at once sugars, cinnamon, nutmeg, salt, baking powder, flour and eggs. Mix well. Bake in oblong cake pan 30-35 minutes at 350~. When done remove frm oven and put topping on right away. Topping. Mix together ingredients and spread on cake. Place under broiler and brown...watch carefully. Another yummy one! Kay. -----
