Fruit Cornish Hens Recipe


8 Cornish game hens (each abou

12 Large garlic cloves; peeled

5 g Dried oregano

Salt (to taste) Pepper (to taste) 25 cl Red wine vinegar

150 g Pitted prunes

150 g Dried apricots

150 g Pitted green olives

100 g Capers (plus a bit of the ju

200 g Brown sugar

25 cl Dry white wine

10 g Italian parsley (chopped)
