Aggie's Irish Soda Bread Recipe  [ Cooks Recipse ]


    three cups unbleached white flour
    2 tsp baking powder
    1 tsp baking soda
    half of tsp salt
    12 tbs (1 half of sticks) cold, candy butter
    2 cups raisins, ideally gold
    1 egg
    1/2 cup honey
    1 cupbuttermilk


    preheat oven to 350°f.
    sift flour, baking powder, soda and salt into a large mixing bowl.
    reduce the butter into small pieces and add.
    reduce it into the flour with a pastry blender, till combination is the size of peas.
    add the raisins and toss to distribute evenly, using 2 forks.
    beat the egg in some other bowl till very frothy.
    beat inside the honey.
    while it is well combined, beat within the buttermilk.
    step by step pour the liquids into the flour, tossing all of the even as with a fork so the aggregate receives calmly moistened.
    hold tossing lightly with 2 forks till the batter comes together; it does not need to be completely combined and need to be very difficult and lumpy.
    butter a heavy skillet or casserole, 10 to 11 inches in diameter and 2-3 inches deep.
    spherical is the traditional form.
    spoon batter out into the pan and push it gently to fill the pan.
    it may mound up rather within the center.
    bake at 350°f for about an hour or until the middle is about.
    cut out a piece to check if essential.
    cut into wedges and serve heat from the pan.
